Snow's BBQ: Texas' Legendary Saturday Pitmaster Feast

World-famous brisket served only Saturdays in Lexington, TX. Join the early line for smoky perfection that draws pilgrims from across the state.

About Us

Nestled at 516 Main St in tiny Lexington, Texas, Snow's BBQ isn't just a restaurant—it's a ritual. Since 2006, when pitmaster Tootsie Tomanetz turned heads at the Austin Chronicle's 'Best Barbecue' poll, this unassuming joint has become the holy grail of Texas 'cue. We're talking melt-in-your-mouth brisket, bark-crusted just right, smoked low and slow over post oak from dawn till sell-out.

Every Saturday at 8 AM, the gates open to a line that snakes around the block—folks from DFW, Houston, even out-of-staters camping overnight for a plate number under 50. The air thickens with hickory smoke, jalapeño sausage sizzles, tender turkey glistens, and that potato salad? Creamy, tangy perfection. It's not fast food; it's a pilgrimage.

Tootsie and her crew rise before the roosters, tending pits that churn out ribs, pork shoulders, and chicken worthy of legend. With a 4.7-star rating from 1,587 devotees, Snow's embodies Central Texas pride: no frills, all flavor. Rain or shine, we're slinging the best damn barbecue this side of the Brazos. Come hungry, leave stuffed, and join the ranks of those who say, 'Best brisket of my life.'

What We Offer

Fire up your appetite for Snow's unbeatable Saturday lineup: post oak-smoked brisket that's juicy, tender, with a peppery bark that haunts your dreams. Moist turkey slices like butter, fall-off-the-bone ribs dripping sauce, and jalapeño sausage packing spicy punch. Don't sleep on the pork shoulders or whole chickens, perfect for feeding a crowd.

Sides seal the deal—creamy potato salad loaded with mustard kick, tangy slaw, buttery beans, and pillowy rolls. We serve it plate-style only, no reservations, first-come-first-served till we sell out (usually by 11 AM). BYOB if you like, picnic tables under the oaks for that authentic Texas vibe. Cash only, so hit the ATM. Whether solo or caravan, one bite and you're hooked—pure, unadulterated Central Texas barbecue bliss.

"Very friendly people, we had great weather. We got up at 1:30a to drive in from DFW...food was ok. Great potato salad!! Good turkey, moist & tender brisket & chicken was good. Jalapeño sausage was a bit dry & pork steak was ok. Over all the best part was the atmosphere! Yes they have restrooms. Bring chairs, drinks & snacks. Dress for the weather. Even though they open at 8am you will still be in line for a while depending on far back you are."

"Adding another amazing review of this legendary Texas BBQ establishment. I arrived at 5:45 and I was 68th in line. It was a quiet Saturday morning. Everyone sat and spoke amongst themselves. A few people milled around taking in the scene. The smell of smoke filled the pre-dawn air and the stars and moon were shining above. I knew I had arrived at a place that lives up to its name, even before tasting the food. When they opened at 8 am sharp the early morning light created a magical scene, and the line slowly began to move. They have their entire ordering and dining service down to perfection. There is enough seating to allow everyone time to enjoy their meal. It seemed like by the time one table was getting up to leave the next group of happy customers was coming out of the door with their platter of food, anxious to eat BBQ for breakfast. I am so grateful to have eaten here and I got to meet Mrs. Tootsie and Kerry. Amazingly generous, genuine good people. I was also lucky enough to be one of three lucky winners of that days raffle. I scored a free BBQ seasoning. Thanks for the experience."

"Arrived at 5am and I’ve got a line number #42, it was the greatest Texan barbecue tastes in my life. Brisket was tender and juicy, ribs and sausages were great. And I also ordered pork shoulders and turkey breasts were insanely amazing too. I’m not living in Austin and Texas, but its really worth rushing and waiting at the early Saturday morning. Really pleasurable moment in my life."

"Excellent experience on Sat 1st of November. Cold day, with chance of rain so no much line. We arrived at 5am and were 24-25. They gave us coffee while we waited and closer to 8am they did a raffle and we won a shirt. We had the brisket, pork ribs, sausage, pork steak, and banana pudding. Meats were very good, pork ribs were our favorite. Banana pudding also excellent, home made flavor. We also tried the sweet/unsweet tea, good alternative if you are not drinking. Kerry was around a lot, and took pictures with everyone. Tootsie came up at around 7, also very friendly! Some logistics: we arrived early so there were “free” chairs you could grab but there were not many. Parking is right next to the place, plenty of it. Definitely a once in a lifetime experience!"

"Taking advantage of Hill Country barbecue is an experience. This unique pit style is something you have to experience, especially if you are not in the central Texas area. The care and attention that you see from Ms. Tootsie is something that other pitmasters should replicate if they want to try this style of barbecue. We visited when there was a windchill that made the outside 14°F in Central Texas. Having been to Snow’s for the first time, it was a great opportunity for us to arrive shortly before it opened, but still in a good spot in line to ensure we got to try all of Kerry and Ms.Tootsie‘s barbecue the ribs that Ms. Tootsie makes are some of the best I’ve ever had there’s a bit of a pull off the bone, but it has the taste of a nice piece of bacon. You can’t go wrong with her brisket as well. The entire group there are accommodating and sweet. It was definitely worth the visit to this small town of just around 1000 people about an hour outside of Austin Texas."
